Safest way to clean up rodent mess and chewed bait

I had an issue with some mice getting in my house a few years ago. Honestly, I never cleaned out under the bathroom cabinet where the pest control person threw some bait (the kind that is like a lincoln log). I opened the cabinet the other day and noticed that it had disintegrated (or maybe was chewed). How do I safely dispose of this? Also, I noticed a single mouse poop in a closet in the guest bedroom that is never used. I'm living in the southeastern US. Hantavirus is not typically prevelant in my area, but I'm super worried and want to be extra precautious when cleaning. Also, how do you clean out a garage without sweeping (I understand sweeping is the worst thing you can do to clean rodent poop)?
